This hardy biennial requires light, well composted soil in full sun. It is grown in full sun from seed. The required distance between plants is at least 30 cm and the height is more than a metre. Fennel is a large perennial with a strong liquorice flavour. Add it to salads, sauces and fish dishes. The seeds are very good for indigestion and are added to baking and to curries and chutneys. The bulb of the Florence fennel is cooked as a vegetable or eaten in salad. Fennel tea is also a pleasant drink. A bronze variety is largely decorative.
