Varieties, green and bloody

Sorrel thrives in damp, well-composted soil. It loses condtion in poor soil .Sorrel is a very sour perennial with large bright green leaves (green sorrel) or leaves with thick, red veins (bloody sorrel). It is delicious in stews and soups, soft cheeses and egg dishes and, sparingly, in salad. Raw, it is full of Vitamin C. The red veined variety  makes a good garnish.
